These are so pretty and quick to make! These cookies become my go-to so often that I regularly keep a box of cake mix in my pantry, even though I have never once baked a cake. Red Velvet Whoopie Pies

The recipe was awesome, but I did make a couple of adjustments… I left out the red food coloring, and I added fresh blueberries on top of the filling. Yummy! These are the prettiest whoopee pies ever! I just love that rich jewel red velvet! The cookies will only take about 10-12 minutes in the oven, then let them completely cool before sandwiching cream cheese filling between. They would be perfect for a Christmas party because so many people following special diets would be able to have them, since they are vegan, gluten-free and nut-free! :) These are the cutest, prettiest Christmas cakes!
