Raw Vegan Chocolate Peanut Butter Cheesecake

I made this today for my mother birthday. EVERYONE LOVED this!! It was absolutely amazing!! I used dark cocoa instead of cacao so mine was darker and very rich, but oh! so good! A definite keeper! 
This was delicious! I soaked my cashews overnight in the refrigerator with water & one TBS salt. Then, I put everything together this morning & made the delicious peanut butter cups right before serving. This is rich! It's very satisfying.
Ingredients:   Base: 1 cup dates1/2 cup almonds
Blend together and spread at the bottom of a parchment paper lined 6 inch round pan. Set aside
  Chocolate Layer: 2 bananas2 cups cashews, soaked for 2 hours3 tablespoons cacao powder2 tablespoons maple syrup
Blend ingredients together until a smooth texture is reached. Pour mixture into pan and place in the freezer for 8 hours or overnight.
  Peanut Butter Cups: 1/4 cup + 2 tablespoons coconut oil, melted1/4 cup cacao powder2 tablespoons maple syrupPeanut butter

No Bake S'mores Cheesecake

This recipe was a hit! I actually made it in a small pan vs the individual dishes due to limited supplies while camping, but it turned out GREAT!! The roasted marshmallow topper was the best part. Everyone loved this for dessert.

These are so cute! I love that they’re easy but still so festive. I love meringue buttercream – Italian or Swiss. These cupcakes beautiful and the frosting so good! I think it’s one of the best culinary inventions ever. These cupcakes are stunning! Love the colours – so vibrant and fun! That colored coconut is one if the best ideas I’ve seen lately. Better Than Starbucks Lemon Loaf

I tried it and my daughter and her friends all said it was the best cake they have EVER eaten (I strongly agree and I’m not a lemon cake person). I didn’t have lemon extract so I just added some extra lemon zest to cake and icing. I actually liked the icing better with the peel instead of the extract. And, I only had vanilla greek yogurt and liked it better with that as well. I made it a second time exactly like the recipe and liked the first one better…so did everyone else. Oh So Yummy for the Tummy!!!

Spring Caramel Pretzel Bites

These Spring Chocolate Caramel Pretzel Bites are a great springtime treat. Sweet, salty, crunchy and delicious they are a perfect dessert for Easter, Mother's Day or even a Spring Sunday Brunch.

Once the chocolate has cooled, use the tip of a knife to transfer the chocolate disc unto the caramel disc.  Press down gently, the sticky caramel will grab unto the chocolate and they be firmly attached.  You are done!  These Spring Caramel Pretzel Bites are just that easy to make!

Flourless Chocolate Torte

I made this amazing torte this weekend! I was so afraid it was going to taste like chocolate eggs…And it actually tasted like heaven!! Perfect for the chocoholic! Purely decadent!! I actually liked it cold instead of warm. I will keep this recipe in my back pocket too! This absolutely fabulous, and I love that it’s so easy to make! 
I made them as directed above, except that before melting the chocolate, I mixed the sucanat with two of the eggs to melt. I filled them about two-thirds full, and bake them at the instructed temperature, for 15 minutes. The above recipe made well over two dozen mini cupcakes size tortes. The texture is perfectly smooth, so yes, sucanat!I’ve never made a torte before, so I’m not sure how done they should be. They are very moist.

I tried this recipe with my brand new doughnut pan, I had never made doughnuts before so I was a little nervous but I followed the recipe exactly and they came out perfect! They looked just as good as the pictures and were delicious! My favorite part is the blueberry glaze on top,YUM! 
They were incredible in every way. Moist and fluffy and perfect. So fresh and perfect for Spring! They're easier than you think, and super moist!

Sea Salt Dark Chocolate Almond Clusters

These are delicious! They are a tad hard to bite if the almonds overlap so be sure they are in a single layer in the clusters. So good! My son and I loved these candies! The combo is chocolate and salt was wonderful. This is my ideal chocolate recipe. Lots of crunch and chocolate in every corner.
Just 4 ingredients in these addicting sweet and salty almond clusters. Toasting the almonds turns them up a notch!

Old Fashioned Cream Cheese Pound Cake

Very good pound cake, tender and not dry at all. Baked it for an hour and twenty five mins in my oven with few moist crumbs on toothpick.   Makes a lot of batter so make sure ur bundt pan is big enough.  Served with whipped cream and berries but tastes good alone too.

Quick, easy and delicious! Very good. nothing fancy just a good old fashioned pound cake. yumm. My husband and my picky kids loved it,  I will DEFINITELY be making this again!!

This cake was incredible!!! The cake was so light, moist and delicious- not at all heavy or dense or even too sweet. This will definitely become my new vanilla cake recipe for any cake that I make in the future. The berry filling was also so delicious! And the frosting was unbelievable!! The perfect amount of sweetness and also light and so flavorful. Such an unexpected texture and taste with the mascarpone. People were freaking out at how amazing this cake was and so was I!

These are dddddeeeeeellllllliiiiiiisssssshhhhhh! Made these for my husbands birthday because he’s eating low carb. You will not miss the brownies out of a box. My 9 year old begged for one and never noticed “it’s different”. The dark chocolate chips are the key ingredient.

Layered Peeps Rice Krispie Treats

These turned out really cute and the recipe was easy to follow. They taste very good, These came out wonderfully! I used two bowls and just rinsed them out after each batch in hot HOT water. I did the whole grease/spray the spoon trick and also used wax paper to help flatten/spread out each layer. I did add more food coloring to the green, but the other colors came out well as long as I mixed the marshmallow/butter really well before adding the rice krispies. I put some extra peep bunnies on top as decoration. I used an 8×8 square pan instead of a loaf and was able to fill it to the top.
This is going to be a regular Easter tradition for myself and my kiddos. My neighbors asked for more.LOL They taste waaaaay better than regular rice crispy treats…makes me wonder if I can freeze peeps and thaw them out over the summer to make more later.

Peach Hand Pies

This recipe was great!! Crust was excellent, but I rolled my crust a little thicker and made 13 pies instead of 18...and the filling was perfect...I stuff my pies a little thicker. I also used only apricots instead of the apricot/peach mixture. I dabbed a little cold water on the inside edges and it prevented the pies from opening during the fry process. 

Ingredients: 2 boxes (14.1 oz each) refrigerated pie crust1 can (21 oz) peach pie filling1 tsp cinnamon2 1/2 cups powdered sugar1/4 cup milk1 egg white, beaten
Directions: Preheat oven to 425°F. Coconut flour is the best Paleo baking flour anyways! I used to LOVE this cinnamon coffee cake from Corner Bakery and this blueberry lemon loaf found in Gelson’s Market! I think the Paleo version of this breakfast cake would taste AWESOME!
